Thanks Henry, it is an eye opener to see all of the expense that goes into making such a sophisticated operation. I have a difficult time complaining about he cost of maple when you consider the equipment and labor that goes into making it. As much as I am amazed by the new technologies I still really like going to an old sugarhouse that holds decades of history envoloped by the warm wood fired sugar rig and the smells of maple in the air.
