One of the traditions I remember used to be on Holy Thursday, when the Gloria was sung and the altar boy rang the bells on the altar and someone rang the church bells on the outside.  After the Gloria, there was no more music played, except maybe for 1 note to get everybody on key, as everyone sang ac capala, from then until at the Easter Vigil when the Gloria was again sung and the altar boy rang the bells on the altar and someone rang the church bells outside.

Prior to when we had the Easter Vigil, we used to have a Mass at midnight, at least in Fairfield where I grew up.
