I don't know about you, but I can actually visualize a real Vermonter digging into a pancake with something other than Maple Syrup on it, running over to a garbage can and spitting it out.  The Corporate Big Wigs at IHOP apparently can visualize that also as they have made an exception for the Handy Chain of IHOPs in Vermont and are allowing them to serve Real Maple Syrup.  Of course there is an extra charge.  The 99 cent container will just about do one pancake lightly.  You can read the Free Press Article below by clicking on the link if you wish:

Don't forget French Toast!!!

I worked at the Sea Sage Restaurant in Colchester for a summer once when I was in college.  The owner, (I think his name was Bernie Sage) told people he served real maple syrup.  I was filling the tiny  IMITATION syrup containers once in view of the customers, and he actually hit me!  I should have sued the pants off him.  Needless to say, I quit, and he went out of business.  He was just an awful person.  Just rotten.  See what happens when there's no REAL sweetness around!!  He always said he was a born again Christian too...so much imitation going on there.  I'm not a big fan or reality, but I am of REAL maple syrup!!  (and genuine people too!)

Or ice cream, or doughnuts, or warm baking powder biscuits.  At Hannah Duprat's brunch Sunday, I noticed people were pouring over their scrambled eggs, bacon, sausage, ham, english muffins and pancakes, so I gues you could say, Vermont Maple Syrup makes any food taste better.

Maple syrup is definately good on bacon, ham and sausage.  Another favorite of mine is a tablespoon, or two ;) in a glass of cold milk, or a sandwich made with unsweetened Teddy's peanut butter and a bit of maple syrup (beats honey roasted peanut butter, and at least I know how much sugar I'm getting).

When my son was in Elementary school, and brunch for lunch was on the menu, he brought his own syrup!  He has helped a neighbor sugar for years and really appreciates pure Vermont Maple Syrup.  I think most of us do!

We took a little drive last night and saw that there are some really large sugaring operations around.  I like to see when they use horses to gather.  It's very picturesque!

Sometimes i can't control the urge to just pour a shot of it and sip it down.  "PURE Syrup,"  you say? Yes, pure syrup a little warm.  Sure, there's side effects - but that smooth sweet aromatic elixir is just too good to resist.

You can also freeze syrup. It gets really thick, not solid. Mom was cooking some beans and put some frozen syrup in. I licked off the spoon.

Not sure if it was the sugar or the flavor, but it took my breath away.

Hi Henry,
I want to add to Mikes statment on freezing maple syrup. You can freeze it solid. Put it near the condensor unit of the freezer, and have it covered with other frozen foods. Frozen syrup flakes, like tuna fish. You peel it off with a fork. It seems to have its own unique taste, when frozen.

Ahhh maple syrup...the very best being Dark Amber or even darker grade B (I can't imagine that ANY real maple could be a grade less than A+!) I personally feel it's sacriligious to use a fake manufactured syrup and think it's funny that people find the real stuff too sweet compared to the other which is 100% processed sugar in one form or other.

When my son was younger each season when we got the "new" syrup, it was a tradition to try it by warming some in a shot glass. When we would get syrup from different places, we had to have a "taste test" to make sure our favorite producer reigned supreme and they did all but one year. This was something my son enjoyed tremendously and his younger sister too when she was old enough. I no longer use 2+ gallons of maple syrup a year, but I always look forward to getting it and recalling the taste-test. It's especially sweet when my kids say "remember when we used to..." (fight over the sugar-on-snow pan, because my little one always thought she was being cheated!)
Ahhh maple syrup...

We freeze our syrup too.  It is delicious.  Well, delicious in any form!  Off to have my first maple creemee later on today!
